Cheesecake Slice Pops

Chilled cheesecake wedges turned into handheld pops, then individually finished with dark chocolate and crushed pistachios.

Ingredients

  • 1 fully baked and chilled round cheesecake
  • 6–8 food-safe popsicle sticks
  • 120 g dark chocolate
  • 40 g pistachios, roughly crushed

Preparation

  1. 1.Chill the cheesecake completely before working with it. It needs to be firm enough to hold its shape.
  2. 2.Cut the cheesecake into 6–8 equal triangular wedges while keeping the slices assembled in the original round shape.
  3. 3.Take one food-safe popsicle stick and insert it HORIZONTALLY through the outer curved crust of one cheesecake wedge.
  4. 4.Push the stick several centimeters toward the center of the wedge so it forms a secure handle.
  5. 5.Repeat with the remaining wedges. When viewed from above, all handles should point outward around the cheesecake.
  6. 6.Hold one wedge by its stick and gently slide it away from the rest of the cheesecake.
  7. 7.Place the wedge onto a small plate or parchment-lined tray.
  8. 8.Melt the dark chocolate gently until smooth.
  9. 9.Spoon or pour melted chocolate over the outer portion of the cheesecake pop.
  10. 10.Immediately sprinkle crushed pistachios over the wet chocolate.
  11. 11.Allow the chocolate to set before serving.

Pro Tip

Work with a very cold cheesecake. The colder and firmer the filling and crust are, the easier it is to insert the handles and remove clean wedges without damaging them.
